DTI seminar on meat
processing set Dec. 5 to
 

A Training on Advance Technology in Meat Processing will be held on Dec. 5 and 6 at the Negros Federation of Sugarcane Planters Training Center in Alijis, Bacolod City .

The training, organized by the Department of Trade and Industry in coordination with the Department of Science and technology and the Association of Negros Occidental Food Processors Inc., will provide food processors, livelihood coordinators, restaurants and hotel operators, and schools with relevant knowledge appropriate to the current market demand, both here and abroad.

It will feature discussions on Meat and Meat Composition, Causes of Meat Spoilage, Common Food Poisoning Organisms, Sources of Meat Contamination, Deteriorative effects of Microbes on Processed Meats, Methods of Preventing Spoilage, Non-meat Ingredients, Flavor Training and Sensory Evaluation, Introduction to Enhancers and Flavors, Flavor Categories, Building a Flavor Profile; and Laboratory Exercises and Evaluation on Different Fat Levels of Hamburger and Higher-end sausage-bratwurst.

Training fee is P1,100.00 inclusive of meals, training materials, and certificate.
